En r\u00e9alit\u00e9, les sauces shoyu standard ferment\u00e9es naturellement mac\u00e8rent pendant un an. Pour obtenir une double fermentation, nous prenons la sauce d\u00e9j\u00e0 pr\u00eate et y ajoutons \u00e0 nouveau les ingr\u00e9dients (dans ce cas, les lentilles et le quinoa), puis nous la laissons fermenter pendant une deuxi\u00e8me ann\u00e9e. Le doublement de la quantit\u00e9 d'ingr\u00e9dients donne un go\u00fbt riche, mais pas trop puissant. Deux ans de mac\u00e9ration att\u00e9nuent l'agressivit\u00e9 du sel, ce qui donne un go\u00fbt encore plus raffin\u00e9, rond et d\u00e9licat.<\/p>\n<p>Tous les ingr\u00e9dients sont issus de l'agriculture biologique et sans OGM.<\/p>\n<p>Due to the fragile nature of the product, we had to suspend shipping of this sauce.
