Advanced amazake workshop, Paris – January 2024

Amazake is slowly becoming appreciated in France. In this workshop, you will learn different types of amazake, technical issues of making amazake from koji, and possible variants. We equip you with the ability to master your amazake making by gaining some fundamental science behind koji fermentation.
