This flavorful red miso is made with chickpeas grown in an organic farm nearby near Issoir in Auvergne. This unusual combination with barley instead of rice gives a sweeter result and a slightly thicker texture.

This miso is adapted for both making miso soup as well as using as a condiment to make various sauces and marinade.
