Our white miso series is one of the hallmarks of our maison.
White lentils from Saint-Flour are incredibly delicate in color and taste. We work with an artisanal farmer who makes lentils that are even more refined than others in the region. We leave the miso uncrushed to preserve the beautiful autumn hue of the lentils, which becomes even brighter with the fermentation process.
It is a true luxury product made with an unusual amount of koji and very little salt, making it extremely versatile. It can be used in a marinade mixture for Saikyo-yaki or in various sauces and dressings. Mixing it with oil or mayonnaise makes it an excellent dip for vegetables and sandwiches. It can also be used in desserts. An atypical creation, the white lentils in this miso are not entirely crushed and made into a paste for aesthetic reasons.
Because the product is very fragile, it is shipped in a vacuum pack.
Always keep refrigerated. Recommended usage within 3 months after opening.
